Kolofske's Chicken Tacos

These two were some of the first guests in our new apartment, and hold a very special place in our hearts...and our kitchen table. Raychel made her mom's famous chicken tacos. Bryan took pictures, and watched TV with Stuart. We stuffed ourselves to the brim and topped it off with some Snickers ice cream bars.



Kolofske's Chicken Tacos
2 cooked chicken breasts, cut into strips
6" uncooked corn tortillas
Vegetable oil
Cheese
Salsa
Lettuce
Guac
Etc.

Heat the oil in a frying pan on med-high heat. Place the chicken strips into the tortillas. Hold each taco in the oil for about a minute until it hardens. Then lay it down in the oil to finish cooking. Flip half-way through. Once you've cooked all of the tacos, serve with your toppings of choice. Makes enough for six...or 3 people and Bryan.
